This weekend, we’re brought you an easy-peasy egg fried rice recipe. INGREDIENTS 2 tbsp vegetable oil 1 onion peeled and diced 2 cloves garlic peeled and minced 4 cups (800g) boiled and cooled long grain rice ½ tbsp sesame oil 2 eggs 2 tbsp soy sauce ¼ tsp salt ¼ tsp garlic salt 1 tbsp lemon juice STEPS Fry onion in a little oil in the wok. Add minced garlic and cook for further 30 seconds. Add the rice, turn the heat to high, drizzle a little sesame oil. Toss everything together with a spatula. Once the rice is hot, move the rice aside and add two eggs. Cook the eggs over the heat, add a splash of soy sauce, and stir the eggs into the rice. Add more soy sauce, a sprinkle of salt and a drizzle of lemon juice. Here's what you'll need to prepare some spicy and succulent fajitas: INGREDIENTS 400g can black beans, drained Small bunch of coriander, finely chopped 4 large or 8-12 small flour tortillas 1 sliced avocado 2 tbsp soured cream 1 red and 1 yellow pepper, cut into strips 1 tbsp oil 1 red onion, cut into thin wedges 1 garlic clove, crushed ½ tsp chilli powder ½ tsp smoked paprika ½ tsp ground cumin 1 lime, juiced STEP 1: Take two or three strips from each colour of pepper and finely chop them. Set aside. Heat the oil in a frying pan and fry the remaining pepper strips and the onion until soft and starting to brown at the edges. Cool slightly and mix in the chopped raw peppers. Add the garlic and cook for 1 min, then add the spices and stir. Cook for a couple of mins more until the spices become aromatic, then add half the lime juice and season. Transfer to a dish, leaving any juices behind, and keep warm. STEP 2: Tip the black beans into the same pan, then add the remaining lime juice and plenty of seasoning. Stir the beans around the pan to warm them through and help them absorb any flavours of the fajita mix, then stir through the coriander. STEP 3: Warm the tortillas in a microwave or in a low oven, then wrap them so they don’t dry out. Ingredients 1 tbsp olive oil 2 garlic cloves, minced 1 onion, finely chopped 2 zucchinis, finely sliced 1 red capsicum/bell pepper, finely sliced 1 broccoli*, broken in small pieces 250g of Pasta (any) 800 g crushed tomato 2 tbsp tomato paste 1 tbsp Oregano powder 1 tsp garlic powder 1/2 tsp chilli flakes 1.5 tsp salt 0.5 tsp black pepper TO SERVE: Finely chopped parsley (optional) Parmesan METHOD Heat oil in a large pot over medium. Add garlic and onion - cook slowly for 3 to 4 minutes until onion is translucent and sweet. Turn heat up to medium high, add zucchini and capsicum. Cook 1 1/2 minutes. Add remaining ingredients except pasta and broccoli. Stir until tomato paste dissolves. When liquid starts bubbling, lower heat to medium, add pasta and stir. Top with broccoli, push in. Place lid on and cook for 5 minutes. Remove lid. Cook for another 3 to 4 minutes, stirring frequently, until pasta is almost cooked through and most of the liquid has been absorbed by the pasta. Adjust salt and pepper to taste. Leave for 1 minute until pasta is perfectly cooked. Here’s how you can do it: INGREDIENTS: 500 gm grated Carrots Sugar Milk 120 gm grated Khoya Ghee Nuts Cardamom Powder METHOD: 1. Add grated red carrots and ½ liter whole milk to a heavy bottom pan and mix well. 2. Cook on medium-low heat for 20-25 minutes until all the milk is absorbed. 3. Add about 60 gm of ghee to the pan and cook for 10-12 minutes. 4. Now add 120 gm of sugar and cook for another 4-5 minutes. 5. Add 120 gm of grated khoya to the pan and cook until ghee starts to leave on the sides, stirring frequently. 6. Add 1 tsp cardamom powder and 4 tsp of slivered almonds and pistachios and mix well. 7.
